Poked hole in ceiling drywall..to discover plaster ceiling

So, I was poking around the ceiling to see if maybe the previous owners covered up previously exposed and refinished beams..which I did not find. However, I noticed there is plaster (?) above. Could this be the original ceiling? Are those wood planks not ceiling joists?

Btw, house is a 1920's craftsman if that's helpful

Looks like plaster it could have been placed there for fire proofing.

What is under the plaster coating?  look for wood lath. also what is on the other side of that plaster?
