Texture ideas for plaster wall

We recently bought our project house, a 1900 built 2 story Victorian? house in need of LOTS of repairs. Some crack-smoking idiot (and I do mean this in the nicest way possible) actually "wallpapered" the walls with foil CHRISTMAS WRAP and double stick tape (yes, REALLY) over the plaster walls. While I have not cleared off every square inch yet, most of the walls I have exposed are in relatively good shape. My question is this... I realize with the age of the house the walls are not perfectly smooth and I will need to repair some cracks, etc. after exposing all of the walls. Will I have better luck hiding the imperfections with a basic spray-on type texture job (done myself) or a faux painting technique. Please help me settle this arguement with the better half. Any advice will be helpful!!!! Thank you!
