How to fix extended window frame/jamb

I discovered that this wall in the bathroom has two layers of sheetrock and for many reasons I'd like to rip the top layer off. If I do that, then the jamb/frame (I don't know much about window terminology) extends too far past the old layer of sheetrock by 3/8 inch to be able to install the window trim flat against the wall.

What is the best way to handle this? The window is also crammed into this corner and in an ideal world, I'd move it out of the corner an inch or two and install a window that's wider by a few inches. I've read a little bit about how to install a window, but not how to make one larger (nor how to deal with altering the outside siding, sill, etc.).

Any help would be appreciated.
