Hanging kitchen cabinets on plaster walls...

My house is about 50 years old, but I would swear it was 100 years old! Plaster walls are almost completely throughout the house, which I didn't mind...that is until I decided to remodel my kitchen. I found a really nice stud finder and I'm finding studs alright. They seem to be all over the place with no particular pattern to their placement! There are studs where I don't need them and no studs where I do need them!

My biggest concern is being able to screw my cabinets to the walls safely and firmly if there are no studs to screw into. Should I use the studs where I can and use anchors in other places? Or should I cut out the shape of the cabinets and build my own studs to screw into? Or should I do something else altogether?

I'm almost at the end of my own pitiful rope! PLEASE HELP!!
