I installed a new concrete patio that runs up against my house and sloping away to keep surface water away from the house. Against the house, the concrete covers about an inch of the lowest portion of siding. Should I saw it away to leave a space for it to "breathe" or should I caulk it to prevent seepage?

Not really an answer to your question , but I would like to point out that if you have a Termite contract with a pest control company , they might not be too happy with you " hiding "
the view of the house slab . This is assuming that I understand
what you did .
I did the same thing one time with a wood deck . I had to trim the deck boards to allow them to see the slab . I wasn't happy .
