Mahogany Countertops

I just purchased a home with a high gloss Mahogany kitchen countertop. I find it scratches very easily. I would rather have a butcher block counter top with a natural wood. Where the scratches become part of the look. Something that I can cut on and really use without worry. So my question is can I just sand down my Mahogany for this look?
