Skim coat vs drywall replacement

I have multiple walls in my house that the previous owner painted with a significant amount of texture (to the point where it'll remove a layer of skin if you scrape against it), including going up a set of 6 stairs and a couple10-12 foot tall walls.  I want to get rid of it, but I don't know if I should skim coat or remove/replace the drywall.  I'm also not sure if I should do it myself or hire someone.  Any information on costs and difficulty is greatly appreciated.

Sheetrock is very inexpensive. But are you sure that you have sheetrock? If so, I would replace it. We have no idea of your ability to hang sheetrock, tape and mud. Or what tools you have, or are willing to purchase. If you have plaster, then scrape it off. Never tear off the original plaster. There are many great benefits to having plaster walls.
