Sink and P-trap lining up

I recently installed a new sink/vanity - and wouldn't you know it the stupid P-trap doesn't line with the Ameraican Standard "quick connect" drain. -

I dont know much about plumbing but I can follow directions  -

I think my best bet is to cut the pipe coming out of the wall, leave it sticking out about 3inches and somehow attach a PVC pipe/p-trap?

The metal tail piece that appears to go through that round O ring to hide the hole in the wall is connected into a copper pipe, just on the other side of that ring. So if I were to cut the metal tail at that copper pipe, whats the best way to then assemble a new PVC tail-pipe/p-trap and have to connect into that copper pipe that IS NOT threaded?
