Should I use grommets to run pex through studs?

I actually wanted to, to make the installation look professional AND make sure I prevented premature wear down the road. Would I just use the same grommets that I use for copper?

If you are using metal studs, then yes grommets are required, if you are using wood studs, then you need protector plates at each stud location where the pex passes through! Good Luck!
