repairing moisture damaged plaster walls.

Our 1908 house has walls that have suffered damage due to moisture leaks from cracks in the mortar in the brick. We are looking to tear the plaster down to the brick, seal it with plastic and then insulate it. What is the best way to adhere the insulation to the brick? Would it be better to stud it out. We have 2 windows which we have to work around to complicate the matter. Any guidance would really be appreciated.
