Refinishing fir panel doors and trim

My husband and I are helping our son remodel a 1909 home. All the original wood work was in the house. We have taken it all out and stripped it down. It had many coats of paint with faux woodgraining that was beat up and chipped. I am wondering if anyone has any advise on refinishing it. It is all fir and gets very blotchy when I have tried staining it. I have just tried a few pieces to get an idea of what we are up against. I did try pre conditioning it and that seemed to help. It would be easier to paint it but we would hate to do that. Any help on techniques and best products to use are appreciated.
