plaster to drywall

Last year we purchased a 1911 four square that has no insulation whatsoever. We removed the plaster and lathe in one room and replaced it with drywall, but the original woodwork does not fit as it should since the drywall is much thinner than the plaster. We need to do the remaining walls (and also update the electrical at the same time), but we want to keep the original woodwork. Any suggestions??? We cant be the only ones with this problem.

I think DW pretty well covered the options. In my area dry wall is readily avalible in ¼", ½" and 5/8" .
