Insulating exterior walls and ceiling

I have an old farm house built in 1935. It is a story and a half with the 2nd floor having sloped ceilings. Luckily it is all sheetrock (no plaster), however, there is no insulation except in the upstairs attic storage walls that I installed.
Can insulation be blown in? I was told upstairs I would need baffles put in, is that true and how would it be done? Behind the sheetrock upstairs is wood, then the joists. If you have it blown in, what about the supports that could be in the walls (blocks)?
