insulating behind wooden wall beams

I recently began renovating my home (built in 1880). There was water damage on the second floor near the chimney, so I took out the plaster and damaged lathe. When I did so, some lovely wooden beams appeared running horizontally behind the vertical lathe. I'm thinking it would look great to clean it up and leave the wood exposed, but I really need to add insulation behind the beams; the room is pretty cold. Would you recommend spraying insulation behind the beams by adding between? Or is there a way to seal over the wood (and spaces between) that would help insulate?
