Hello! Our walls are just plaster against the brick of the house. We know that it isn't possible to take the plaster down because of the brick. My husband has talked about putting up studs and dry wall with insulation, but I think is hesitant, probably on several levels. Is that the best way? If so, are there issues/concerns with connecting the studs to the plaster? Thank you in advance for your advice!

You cannot attach a stud to plaster. You can secure the stud to the brick behind, but why would you? Build the wall and secure it to the ceiling and the floor in front of the current wall. You will lose dimensions on the room. You will have some work to do to extend all the electrical devices. You will have some work to do with the windows and the door(s).
