How to clean gas range valves?

I'm restoring an antique Wedgewood gas stove from the early 20's. The plan it to convert to LP. But before I get there, I'm completely taking it apart and rebuilding it.

The gas burner valves and oven valve are brass/bronze, but completely covered with grease, gunk, blue/green oxidation, etc.

Will I damage the valves if I drop them in an ultrasonic cleaner with degreasers and let it process for a few hours? Or maybe even use the crock pot approach and cook them in a detergent/simple green bath?

Also, does anyone know of a place that will re-enamel or re-porcelain?

Thanks in advance!
