OLD THREAD ALERT! The OP will probably never see these replies. However, others browsing may find useful information here.

Having done this sort of thing before, I can tell you that it is less labor to flatten all the nails on the skip sheathing rather than try to remove the skip sheathing. Just put the plywood right over the smoothed-out skip sheathing. Another benefit: you've got a place to stand when working with the plywood.

NO! NO! NO! NO! Absolutely not!!! Skip sheathing, more often than not, will self destruct if stepped on between supports, meaning, NEVER step on skip sheathing alone, make sure that every footfall is on top of a rafter. Stepping between supports is the quickest way to find yourself laying in the attic, or worse, dangling through the ceiling below.
