hot air heater making noise

i have a new forced hot air heating / ac system 2 zones with 2 heat exchangers and 2 ac compressors. 1 exchanger in basement 1 in the attic. I actually have 2 questions First, in the winter the water going to the heating unit in the attic bangs the first time the heat goes on in the morning. The plummer said it is because the water going up ia cold and hits hot water so it bangs, his solution is to keep house warmer so water doesnt get so cold. Tne pipes are made of that new plastic material and not copper. I can not get at the pipes to completely insulate them. Any suggestions? Second,, same unit in attic, I can not get attic cool in winter so AC works too hard whan it comes on. I have new roof with soffitt all around and a ridge vent. Contractor did not install any fans or windows. It is a double hip roof Thank you very much for your time
