Hardwood floor finishes, what's best for me?

We are redoing our entire house (which has 2 separate living areas) in hardwoods. One side we're doing red oak, the other moabi. I like the idea of a water based finish based on the nontoxic nature and I do like the matte finish (at least in theory). We have 3 little dogs and 3 cats so scratching and durability is a concern. I've heard many opinions from floor installers but I'd love to hear what the masses think. Anybody have a water over a red oak floor, how's it look? Too light? To monotone? How's the durability? Which finish would be best for our situation: 1. Poly 2. Swedish 3. Water?
