Finish plaster walls

I'm curious about the final finish to plaster walls. I've got a few walls that need touched up, and a big project looming. I've had experience with drywall, but this is my first plaster walled house. The walls all have a bumpy finish to them (see pics attached). For obvious reasons I'd like to have my repairs and future projects replicate this but I'm not sure if this is a natural look to plaster or a finish style given to it. So that's my question. Is this bumpy look going to just happen, or would it be smooth looking on it's own, and to get the bumpy look I'm going to have to create that myself. (I'm prepared to practice, but having advice is always great.) Thanks.
