Exposed beams in bathroom

We live in an antique that dates to 1796. We are currently renovating our home and have a question regarding the best way to protect exposed beams and ceiling subfloor in a humid environment such as our bathroom. Yes there will be a vent fan to be used when showering. Will applying a matte polyurethane sealer be a good option? Is there any risk water gets trapped in the wood?
