cleaning varnished pine woodwork and painting panaling

I am a retired lady and am planning to stay in the house which was purchased in 1975. This house has beautiful pine window and door trim and fireplace surround and mantle. I do not plan to change any of that. My questions concern the kitchen and added-on den/breakfast room. Both of these rooms are paneled and the kitchen cabinets are stained and varnished. I only want to clean the cabinets and attach new hardware. I would like to paint the paneling in both the kitchen and den, which are open to each other. My questions are what do I use to clean the cabinets and prepare the paneling for paint. Since the den/breakfast room is approximately 15 x 30 would it be better to attach a chair rail and leave the bottom portion as it is. Your suggestions will be appreciated.
