Best way to seal a cordwood floor

I'm installing a cordwood floor and am curious as to the best way to seal the cookies together before I cover the entirety in epoxy. I'm looking for a similar look as in the attachment.

I would use resin. If you have never worked with resin before, practive on something small, like a few pieces in a plexiglass form. The resin will seal them. You will need to remove all the air from each piece of wood. I recommend that you piant each of the pieces with resin before putting them on the subfloor. This will ensure any/all remaining air in the wodd will not come out during the pour.  Do not use glue to keep them from floating. Use a weight on top. I usually charge $100 per square foot to pour resin that is not tined on a floor.
