1/2 inch furring material? or trim?

I have just gutted the kitchen of my 1925 house and removed all the plaster and lathe. I am left with two window and three doors, all with frames that stick out approximately 1" from the studs ( they're actually pretty inconsistent but that's another story.) I was planning to use 1/2" drywall in the room. So i need a really inexpensive material that is 1/2" an inch thick to use as furring strips. Looking for suggestions. Any ideas?

Would it be easier to go to 5/8" drywall and use a 3/8" furring strip material instead? Or would it be best to skip furring strips all together and use 1/2" or 5/8" drywall right on the studs and just use trim to resolve the issue with doors and windows?

Please advise!
