My house has beautiful 100 uear old oak doors, unfortunately they have been painted. I stripped the paint but it has left a white "residue" in the wood. Any ideas on how to remove that? Thanks
100% removal of the paint may not be possible... but you may try by using heat gun... use heat gun to soften the paint and then use scrapper like -- Circa 1850 Heavy Body Paint & Varnish Remover...

It sounds like you may have had hide glue paint on the door. Try scrubbing it with HOT water. It may raise the grain and require sanding.
